Stuffed dates

24 medjool dates

200g gorgonzola dolce, or other soft blue or goat’s cheese

75g (about ¼ packed cup) very finely chopped salami

runny honey, for drizzling

3 tbsp chopped pistachios, or to taste

Use a small, sharp knife to split each date across the top, then remove the stones. Using a dinner knife, take small amounts of the cheese and evenly fill each date, then place the dates on a platter. Divide the salami among the dates, drizzle generally with honey, then sprinkle with chopped pistachios. Serve immediately.

Do a few hours ahead: Stuff the dates with cheese, place them in a single layer on a plate or in a container, cover well, then refrigerate. Chop the salami and refrigerate, and chop the pistachios. Then, you can quickly assemble right before serving.
